Isle of Wight Blue The Isle of Wight Blue Cheese that won Best English at the 2007
World Cheese Awards is a naturally rinded soft blue cheese that is
made with unpasteurised Guernsey cows' milk from the herd that graze around our dairy. It is blue veined and is sold at 3-5 weeks of age. It comes with a 4 week shelf life. The sizes have a minimum weight of 200g but are approximately 230g, some slightly larger some slightly smaller. The cheese picked up further medals in 2008 at the British and World Cheese Awards in Cardiff and Dublin.

The Isle of Wight Soft is a soft white mould ripened unpasteurised cheese.
It fits nicely in between the brie and camembert brackets. It is sold at
3-5 weeks of age and has a further 3-5 week shelf life.
Gallybagger is made to a cheddar recipe and is 7 months old.
Again, unpasteurised Guernsey cow's milk from our farm is used.
The cheese sitson locally cut sycamore wood and the aroma from
the wood infuses through in to the cheese and adds extra flavour.
I have only been selling this cheese since November 07 but already
it is proving very popular. Apart from a couple of pieces that reach the
mainland, the vast majority is only available here on the Island.

In the summer when our milk is plentiful I am still only using 3,000 litres of milk a week which is nothing compared to larger-scale cheesemakers.
Making in relatively small amounts enables me to keep the quality level of the cheese high which is the most important thing for me.
